This was baked using Bakels Low GI Bread Mix
to which was added dried cranberries and polenta corn. The Polenta Corn
was also used to coat the bread roll, giving it a crunchy texture. Bread
baked using this low GI mix is very tasty and is suitable for those
with diabetes.
